About this recipe

Sweet potato gives this mash its warm colour and naturally sweet flavour. Boiling or steaming the chunks keeps the method straightforward; once tender, they are ready to mash with butter and a little warm milk or cream. Salt and pepper balance the sweetness, while a little cinnamon or nutmeg offers an optional variation. The quantities make four side servings; the metric adaptation still needs a kitchen trial.
