About this recipe

Benjamin’s great-great Aunty Al was Alice, his great-grandfather’s sister. He remembers her making brittle biscuits she called cockles, with a thin cream filling. He selected Lee’s cockles as the reference and confirmed that this version should have both jam and vanilla buttercream between the halves.

These small, paired biscuits leave their pale golden tops plain, with the filling visible at the join. The original family formula has not been recovered. Lee describes the reference as delicate and between a biscuit and a cake; this adaptation still needs a kitchen trial to find out how closely its texture matches Aunty Al’s.

Ingredients

Biscuit halves
Thin vanilla filling and jam

Method

  1. Heat the oven to 175°C fan-forced or 190°C conventional. Line baking trays.
  2. Weigh the shelled eggs. Weigh flour, cornflour and sugar separately to match. Replace 1 tablespoon of the weighed plain flour with the coconut.
  3. Cream the 125g butter with caster sugar. Beat in the eggs gradually; fold in the flour, cornflour and baking powder.
  4. Space teaspoonfuls on the trays. Bake 7–10 minutes until lightly golden underneath. Cool completely on a rack.
  5. Beat the filling butter, icing sugar, milk and vanilla until creamy.
  6. Pair the halves. Spread jam on one and a thin layer of buttercream on the other; gently join. Leave the outsides plain.
